Gluten-free Pancake Lunch

Dave is home sick after over a week of a hacking cough and an infestation of poison ivy.  Both of which we (Henry and I) don’t want to catch.  Praise God he has a doctor’s appointment this afternoon.

So I went to the store to pick up some breakfast supplies around lunch time.  I made gluten-free pancakes with coconut milk.  Dave had fresh blueberry and Henry had dark chocolate M & M.  They both loved them! 

They were Henry’s first gluten-free M&M pancakes.  He was in heaven!
