First time through was okay. Henry likes it so I guess that’s all that matters. I used a mixture of canned coconut milk and rice milk and I used the corn starch as a thickener. I also used white sugar. I have to say the texture was unbelievable. Perfect pudding texture. There was something in there that left a grainy or floury taste. Could have been the two cups of rice milk as that stuff is absolutely disgusting (Henry loves it) but I was tasting it before I added it. So must have been corn starch or coconut milk. Next time I’ll use the arrowroot (I guess another type of thickener) and almond milk or fresh coconut milk.
