Super fast, Delicious Curry Chicken Salad

Lately I’ve been whipping up lunches for Dave to take to work.  Here is my super fast Curry Chicken Salad Recipe -

Roasted Chicken (I get them on sale or find a manager’s special. Then put butter, fresh thyme, onions under the skin.  Then put onions, thyme, orange or lemon and their zest inside and around the chicken.  Roast.  It’s delicious).

Sour Cream, Grapes, Curry Spice, Sea Salt and Honey.

Cut off and up desired amount of chicken for one sandwich, add a couple tablespoons of sour cream, salt, cut 5 grapes in half and add, sprinkle curry to your desired taste, add about a teaspoon of honey or your desired taste. 

Yum!  Dave loves these and he’s a hard sell.  You can also use yogurt.  Sour cream is cheap and has way less calories and not all the added junk that mayonnaise has.  Plus Dave hates mayonnaise.

Time and budget friendly.  It lasts all week because you only cut off what you need.  Plus you could eat it on salad!
